Here’s a simple way to get the most out of your fresh veggies: chop them up and freeze them into ready-to-use portions!
- Mix and match for color, taste, and texture.
- Bag them in ordinary sandwich bags. Put in enough veggies for it to fill the bag – but only enough for it to still lay flat (that’s enough for a single serving).
- Bag the bags in a gallon-sized freezer bag (a gallon bag will hold about 6 sandwich bags).
You can let them thaw on the counter, thaw them in a microwave, mix them right into a pot, or saute them in lightly oiled pan.
You can do this to rescue veggies just starting to turn, but it’s best to do them sooner than later.
